Those who know the island are well aware that it is not easy to put this magic into words. But with LAW – The Gin of Ibiza you can literally let it melt in your mouth.
The four friends Luna, Alexander, Wolfgang and Dirk are the creators of LAW and they live on Ibiza. Their “secret weapon” is their own small distillery and a recipe based on typical island botanicals. With this gin they have made their vision come true to bottle the special Ibiza attitude towards life…

LAW – The Gin of Ibiza
And just as the island is colourful, cosmopolitan and a little bit crazy, the recipes with LAW Gin may be. Here are a few ideas for drinks “Ibiza style”…
LAW & Tonic El Pirata
– lots (!) of ice
– 1 strip lemon zest
– ½ „Pimiento de Padrón“, halved lengthwise
– 5 cl LAW – The Gin of Ibiza
– 20 cl premium tonic
Glass: Large balloon glass/fish bowl
Preparation: Fill the glass with ice, add lemon zest, the halved Pimiento de Padrón and LAW and top up with tonic. Give it a brief, careful stir and serve.
Note: Pimientos de Padrón mean a small, green variety of pepper which, fried in olive oil and sprinkled with coarse salt, is a must on any tapas plate in Spain. About every tenth specimen is infernally hot – which you cannot tell from the outside. So it takes quite some courage to garnish your drink with it and is therefore only something for real pirates. ☺
LAW & Tonic Bikini
– lots (!) of ice
– 4 raspberries, halved
– 3-4 fresh basil leaves, slightly “clapped”, to activate its aroma
– 4 cl LAW – The Gin of Ibiza
– 20 cl premium tonic „light“ or „slim“ (without artificial sweeteners!!!)
Glass: Large balloon glass/fish bowl
Preparation: Fill the glass with ice, add the halved raspberries, basil and LAW and top up with tonic. Give it a brief, careful stir and serve.
Note: Originally created for a restaurant with ketogenic cuisine, this version of a LAW-Tonic has also taken the hearts of people with “normal” eating habits by storm. ☺ The reduced sweetness of the light tonic is deliciously balanced by the aromas of raspberry and basil.
Cocktail LAW Salinas
– 4 cl LAW – The Gin of Ibiza
– 2 cl Asbach Aperitif rosé (or pink vermouth)
– 4 cl pink grapefruit juice, freshly squeezed
– Salt, fort the salt rim
– 10 cl ginger beer as filler (we use Thomas Henry spicy ginger)
Glass: Tumbler
Preparation: Stir LAW, pink vermouth and grapefruit juice briefly in a mixing glass on ice. Prepare tumbler with salt rim, leaving ¼ of the glass rim free if desired. Put a few ice cubes in the tumbler, carefully strain the drink over it and top up with ginger beer. (We work with Single Strain because we appreciate the fresh pulp as a quality attribute).
Garnish: 2 thin half slices pink grapefruit
Note: This cocktail was created as a homage to the more than 2000 year old salt flats – “Las Salinas” – on Ibiza, which radiate in all shades of pink depending on the position of the sun.
Cocktail Ibiza Quintessence
– 5 cl LAW – The Gin of Ibiza
– 2 cl dry white vermouth
– 2 cl lemon juice, freshly squeezed
– 2 cl orange syrup
– 1 small twig of thyme
– 1 pinch sea salt
– a few drops of extra virgin olive oil
Glass: Coupe
Preparation: Shake all the ingredients except the olive oil on ice, double strain into the pre-cooled Coupe and carefully add a few drops of olive oil onto the drink.
Garnish: Twig of thyme

Cocktail AppLAWse
– 3 fresh, big blackberries
– 5 cl LAW – The Gin of Ibiza
– 2 cl tonka syrup, homemade
– 2 cl lime juice, freshly squeezed
– 1 cl Fino Sherry
– 1 level teaspoon tamarind paste
– 2 Dash Angostoura
Glass: Tumbler
Preparation: Muddle blackberries in a shaker. Add remaining ingredients and shake vigorously on ice. Double Strain in the tumbler filled with ice, and garnish.
The homemade Tonka syrup is easy to prepare: Bring 1 litre of water to the boil and let a ground tonka bean steep in boiling water for 9-10 minutes. Dissolve 1kg sugar in this “tonka water”. Allow to cool, filter through a fine sieve or cheese cloth and fill into a glass bottle. Store in the refrigerator.
Garnish: Fresh mint and dried flower(s)
